  • 2 pounds fresh green beans, trimmed and cut into 1-inch pieces
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, freshly grated
  • 1/2 cup Parmesan cheese, grated
  • 4 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1 cup panko breadcrumbs
  • 1/2 cup additional cheddar cheese
  • 2 tablespoons melted butter

Instructions

1. Preheat oven to 375°F.

2. Bring salted water to boil, blanch green beans for 4–5 minutes, then transfer to ice bath.

3. In a skillet, melt butter and sauté onions for 5 minutes, then add mushrooms and garlic. Cook until golden.

4. Sprinkle flour over mixture and whisk for 2 minutes.

5. Gradually add heavy cream while whisking to prevent lumps.

6. Add softened cream cheese and stir until smooth and thickened.

7. Remove from heat and mix in cheddar, Parmesan, salt, pepper, paprika, and garlic powder.

8. Fold in blanched green beans until coated, then transfer to a greased 9×13-inch baking dish.

9. Mix panko, melted butter, and cheddar cheese; sprinkle over the casserole.

10. Bake 25–30 minutes until golden and bubbling.

11. Let rest 5 minutes before serving.

Notes

• For a lighter version, substitute half-and-half for cream or Greek yogurt for cream cheese.

• Add bell peppers or cauliflower for extra vegetables.

• Use almond flour and gluten-free breadcrumbs for gluten-free adaptation.

• Freezes beautifully for up to 3 months; reheat covered at 350°F.
