- 1 lb Italian turkey sausage, removed from casing
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 quarts chicken stock
- 1/2 cup heavy cream
- 1 cup ditalini pasta
- 1/2 cup Parmesan cheese
- 1/2 tsp each dried basil and oregano
- Salt and pepper to taste
- Fresh parsley for garnish
- Brown turkey sausage in oil, breaking it up while cooking. Remove and set aside.
