  • 1 lb Italian turkey sausage, removed from casing
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 quarts chicken stock
  • 1/2 cup heavy cream
  • 1 cup ditalini pasta
  • 1/2 cup Parmesan cheese
  • 1/2 tsp each dried basil and oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Brown turkey sausage in oil, breaking it up while cooking. Remove and set aside.
  2. Cook onion and garlic in the same pan until fragrant and translucent.
  3. Add tomatoes, stock, herbs, and return the turkey sausage. Simmer gently.
  4. Add pasta and cook until al dente per package instructions.
