These easy Mint Chocolate Truffles are rich, creamy, and irresistibly smooth, made with just three main ingredients. 8 oz dark chocolate (bar or chips)

1/2 cup full-fat coconut milk

1/2 tsp mint extract

Optional Flavor Enhancers:

• 1 tsp vanilla extract

Optional Coatings:

• Melted dark chocolate

• Melted white chocolate

• Green and white sprinkles

Substitution Ideas:

Instructions

1. Heat coconut milk in a saucepan over medium heat until it just begins to simmer.

2. Reduce heat to low and add dark chocolate, stirring continuously until smooth.

3. Stir in mint extract, salt, and vanilla extract if using.

4. Pour mixture into a bowl, cover, and refrigerate for 2–3 hours until firm.

5. Scoop and roll chilled mixture into small truffle balls.

6. Optional: Dip truffles into melted chocolate and decorate with sprinkles.

7. Refrigerate truffles for 30 minutes to set completely.

8. Serve chilled or slightly softened at room temperature.
