Ingredients

Scale
  • 12 ounces squid ink pasta
  • 1 pound shrimp (peeled and deveined)
  • 1 Tablespoon extra virgin olive oil
  • 6 cloves garlic (thinly sliced)
  • 2 Tablespoons tomato paste
  • 10 ounces cherry tomatoes (halved)
  • 1/4 cup vegetable or seafood broth + 1 tablespoon lemon juice
  • ½ teaspoon red pepper flakes
  • 2 lemons (zested and juiced)
  • 1/2 cup chopped basil
  • 4 Tablespoons butter
  • Kosher salt
  • Freshly ground black pepper

Instructions

  1. Boil Pasta: Bring a large pot of salted water to a boil. Cook the pasta until al dente. Reserve ½ cup of pasta cooking water before draining.
  2. Sauté Garlic & Tomato Base: In a large skillet, heat olive oil over medium-high heat. Add garlic and sauté for 1–2 minutes until lightly browned and fragrant. Stir in the tomato paste and cook for 30 seconds to 1 minute until dark red.
  3. Simmer Tomatoes: Add cherry tomatoes, broth + lemon juice mixture, ¼ cup water, and red pepper flakes. Season with salt and pepper. Cook 3–5 minutes, stirring occasionally, until tomatoes are softened.
  4. Cook Shrimp: Add shrimp to the skillet and season with salt and pepper. Cook 2–3 minutes, stirring occasionally, until the shrimp are opaque and cooked through.
  5. Combine and Finish: Add the cooked pasta, butter, lemon zest, lemon juice, and half the reserved pasta water to the skillet. Toss everything together for 2–3 minutes until the pasta is coated. Add more pasta water if needed to loosen the sauce. Turn off the heat and stir in half the basil.
  6. Serve: Garnish with the remaining basil and serve immediately.

Notes

  • Best enjoyed fresh, but leftovers can be stored in an airtight container in the fridge for up to 2 days.
